Easy Lemon Pasta Alla Vodka

Spring has me craving all the lemony things! Our easy lemon pasta alla vodka definitely satisfies this craving! In this recipe, we took traditional pasta alla vodka and made it into a spring version. We swapped out the tomato for lemon but still kept all the aspects that make vodka sauce so delicious. Easy lemon pasta all vodka is made in one pot. Easy, peasy, lemon squeezy! The pasta is served with air fryer lemon parmesan chicken and it compliments it perfectly!

What does putting vodka in pasta sauce do?

Adding vodka to the sauce intensifies the other flavors in the sauce. It helps to combine the tomato and the cream in regular pasta alla vodka, and the lemon and the cream in this recipe. You do not taste the the vodka, it is simply used to help enhance the other flavors.

How to Make Lemon Parmesan Chicken

The lemon parmesan chicken can be prepped before you start the pasta and cooked in the air fryer while you are making the pasta. This makes it an easy, but necessary addition to the meal! You start by combining an easy marinate of eggs, lemon juice, garlic and seasonings. Let the chicken marinate for at least 60 minutes prior to cooking and as long as overnight. You coat the marinated chicken in breadcrumbs and parmesan and air fry for 15 to minutes. It is so simple and results in flavorful and crispy chicken.

What Ingredients do I need for Lemon Pasta Alla Vodka?

Noodles of choice- we used fusilli col buco which are fun shape to try but can be hard to find, so any other pasta of choice will work. We use the same pasta in our Boursin Cheese Pasta.

Vodka

Lemon- juice and zest

Chicken stock

Sweet onion

Garlic- fresh minced

Fresh grated Parmesan

Spinach

Chicken Breasts

Bread Crumbs

Ingredients
  

Lemon Pasta Alla Vodka

  • 1/4 cup vodka
  • 1 pkg noodles of choice
  • 1 cup heavy whipping cream
  • 4 cups chicken stock
  • 1 small sweet onion chopped
  • 2 cloves garlic minced
  • 1 lemon juiced
  • 1/2 lemon zested
  • 1 cup parmesan freshly grated
  • 2 cups baby spinach
  • 1 tbsp olive oil
  • 1 tsp red pepper flakes or more to taste
  • salt & pepper to taste

Air Fryer Lemon Parmesan Chicken

  • 2 eggs
  • 1/4 cup lemon juice 1-2 lemons
  • 3 cloves garlic minced
  • 1/2 T parsley
  • 1 tsp salt
  • 1 tsp pepper
  • 1 lb bonesless skinless chicken breasts
  • 1/2 cup plain or italian breadcrumbs
  • 1/2 cup grated parmesan cheese (not fresh jarred works best)

Instructions
 

Air Fryer Lemon Parmesan Chicken

  • In a medium bowl mix together the eggs, garlic, parsley, lemon juice, and salt and pepper. Pour into a large ziploc bag and marinate the chicken for at least one hour.
  • When you are ready to cook the chicken combine the breadcrumbs and parmesan in a medium bowl. Dip the chicken in the breadcrumbs to evenly coat both sides. Spray the chicken with cooking spray.
  • Air fry for 15-18 minutes at 390 flipping halfway through. Garnish with parmesan and parsley.
  • Serve sliced over the pasta.

Lemon Pasta Alla Vodka

  • In a large pot of over medium high heat add the olive oil. Sauté the onion for a few minutes until fragrant. Add the garlic and red pepper flakes and sauté 1 minute longer.
  • Add chicken stock, lemon zest and juice, cream and vodka to the pot. Bring to a summer and stir in the noodles.
  • Cook until the noodles are al dente and stir in the spinach and parmesan cheese. Cook until cheese is melted in and spinach is wilted. Season with salt and pepper to taste. Enjoy!
