Pumpkin season is here and we have been taking full advantage and enjoying pumpkin everything! Even if you are not a huge pumpkin person our easy one pot pumpkin soup is a must try. It is savory with the perfect amount of sweetness and we added cheese tortellini for extra flavor! Before we add the tortellini to the soup we blend it with an immersion blender to make it silky smooth. It literally tastes like fall and pairs perfectly with a ham and brie grilled cheese. They are a match made in heaven!
Is Canned Pumpkin as Good as Fresh Pumpkin?
When it comes to fruits and vegetables I almost always prefer fresh. When it comes to pumpkin however, I have never eaten it fresh. I have only eaten canned pumpkin. When I think of cooking a full pumpkin it reminds me of all the work involved in digging out the seeds when carving a jack o lantern. I know the taste of a fresh pumpkin is probably superior to canned, but in this recipe we use canned to keep it easy!
Canned pumpkin is packed with the same nutrients as fresh pumpkin including potassium, vitamin A, and iron. Canned pumpkin usually has more of a vibrant color and silky smooth texture. It can be used in any recipe in place of fresh pumpkin. Someday I will try cooking with fresh pumpkin, but know that canned as just as good of option for this easy one pot pumpkin soup.
What Should I Serve With Easy One Pot Pumpkin Soup?
This soup is delicious all on its own, but bread, a sandwich, or salad would compliment it perfectly! Our Rosemary Garlic Dutch Oven Bread would pair perfectly! A salad with apple, white cheddar and maple vinaigrette like the one we shared here would also be delicious!
When we made the soup we paired it with a ham, apple and brie sandwich and highly recommend it! We started by making an herb butter by mixing softened butter and fresh thyme. Then we spread that on sourdough bread and topped it with ham, thinly sliced apple, brie cheese, and honey. It was warm and cheesy and complimented the flavors in the soup so well!
Ingredients Needed for Easy One Pot Pumpkin Soup
We wanted our recipe to be large enough to feed a family, but if you want a smaller amount this recipe can be easily halved. The ingredients needed for this are mostly pantry staples, here is what you will need:
Two cans of pumpkin puree- 15 oz cans
Thyme- fresh thyme is used in this recipe
Shallot
Garlic
Dry spices: sage, smoked paprika, cloves, salt and pepper
Vegetable broth- low sodium is best
Cheese Tortellini
Heavy Cream
Maple Syrup- pure maple syrup
Pepitas and flaky sea salt for garnish
Easy One Pot Pumpkin Soup
Ingredients
- 4 T olive oil
- 2 small shallots chopped
- 6 cloves garlic minced
- 2 15 oz cans of pumpkin puree
- 2 T fresh thyme leaves plus more for garnish
- 1 tsp kosher salt
- 1 tsp dried sage
- 1 tsp smoked paprika
- 1 tsp cloves
- 1/2 tsp black pepper
- 6 cups vegetable broth low sodium
- 12 oz cheese tortellini refrigerated, not frozen
- 5 T heavy cream
- 5 T maple syrup
Garnish
- flaky sea salt
- roasted pepitas
- fresh thyme
Instructions
- Heat the olive oil in a Dutch oven over medium heat. Add the shallot and garlic and cook until fragrant, about 3 minutes.
- Add the pumpkin puree, thyme, and all the seasonings. Cook over medium low heat for about 5 minutes.
- Add the vegetable broth while stirring constantly. Simmer for 5 more minutes. Use an immersion blender to blend the soup until smooth. Bring to a low boil and add tortellini.
- Once tortellini is cooked and floats to the top of the soup stir in the heavy cream and maple syrup. Heat through.
- Serve, garnish and enjoy!
