Easy Roasted Tomato Soup Recipe

If you have never tried homemade tomato soup now is the time. Our easy roasted tomato soup recipe requires minimal time and effort and is full of flavor! The tomatoes are roasted in the oven with garlic for ultimate flavor and then simmered and pureed. It really tastes nothing like canned tomato soup. It is SO much better.

Roasted Tomato Soup Ingredients

We love how simple the ingredients are in this soup. The fresh vegetables provide wonderful flavor and texture! Here is what you’ll need:

Tomatoes: We use cherry and heirloom cherry in our recipe. Vine on tomatoes would be another delicious option. Small to medium tomatoes like cherry or grape tomatoes work best in roasted soup. Choosing ripe, in season tomatoes will provide the best flavor to your soup.

Garlic: Roasting the garlic adds so much flavor to the soup! Be sure to leave the peel on the garlic when roasting to prevent burning.

Onion: The sweet onion is sauteed rather than roasted to caramelize the onion and add more flavor to the soup. We prefer sweet onion, but red onion is a great substitute with a similar sweet flavor.

Dry Seasonings: The basil and oregano used in the recipe compliment the flavors of the roasted vegetables and are sauteed with tomato paste to intensify or “wake up” the flavor of the dried herbs.

Fresh Thyme: We prefer to use fresh thyme rather than dry. When the thyme is simmered in the broth it adds so much flavor to the soup. However, if you only have dry thyme add it in with the other seasonings.

Tomato Paste: The tomato paste adds a more robust tomato flavor to the soup. Double concentrated is our go to for extra tomato taste!

Balsamic Vinegar: The balsamic adds another delicious depth of flavor to the soup. Don’t skip this ingredient!

Vegetable Broth: The vegetable broth is the main liquid in the soup. We always opt for a low sodium broth.

Heavy Cream: The recipe uses just enough cream to give the soup a rich flavor. Feel free to omit it or replace it with coconut cream for a vegetarian option.

What can I add to my tomato soup to make it even better?

A bowl of soup goes from good to great when toppings are added. Although this soup is delicious on its own, we love to add toppings for extra texture and flavor. Some of our favorites include parmesan cheese, Cheez its or Goldfish crackers, grilled cheese croutons, garlic flavored croutons, a little bit of butter, sour cream, or pretzels. Easy Roasted Tomato Soup

Tomatoes and garlic are roasted together to intensify their flavors. They are then combined with sweet onion and herbs and blended into a smooth soup that is bursting with flavor.

Ingredients
  

  • 3 lbs tomatoes ( I used cherry and heirloom cherry) quartered
  • 1 head garlic cloves seperated but skin intact
  • 1/4 cup plus 1 T olive oil
  • 1 tsp sea or kosher salt
  • 1 tsp fresh ground pepper
  • 1 medium sweet onion diced
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1 sprig fresh thyme
  • 2 T balsamic vinegar
  • 2 T tomato paste
  • 4 cups vegetable broth
  • 1/2 cup heavy cream

Instructions
 

  • Preheat oven to 400. Line a rimmed sheet pan with parchment paper. Spread the tomatoes and garlic on baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat. Roast for 1 hour until the tomatoes become soft and caramelized.
  • Heat olive oil in Dutch oven over medium heat. Add onion and sauté for about 5 to 6 minutes. Add seasonings and tomato paste and sauté for an additional 1 to 2 minutes. Add the balsamic vinegar and simmer until it reduces by half.
  • Add fresh thyme and broth and turn up heat. Bring to a boil and then reduce to simmer for 15 minutes. Turn off the heat and remove thyme.
  • Add roasted tomatoes, garlic and heavy cream. Blend with an immersion blender until smooth. Or carefully transfer to a blender and blend until smooth.
  • Serve garnished with your favorite toppings. Enjoy!
