The Best Sheet Pan Chicken Fajitas

We all have our list of go to meals. These best sheet pan chicken fajitas are on top of mine. They are on the table in 30 minutes and so easy to make. The perfectly seasoned chicken and veggies are so delicious! The homemade fajita seasoning blend is really what makes this recipe so good. Do not buy store bought seasoning mix! You will thank us when you taste this! Our seasoning blend only requires four spices and salt and pepper.

Ingredients Needed for The Best Sheet Pan Chicken Fajitas

Boneless Skinless Chicken Breasts

Sweet or Red Onion- we like to use a mix of both kinds

Sweet bell peppers and green if desired- a mix of colors makes it bright and more flavorful

Lime- the lime juice adds freshness and a little sweetness

Cilantro

Cumin

Chili Powder

Corriander

Smoked paprika– it has a sweeter, smokier flavor than regular paprika. It is one of my favorite seasonings to add to Mexican dishes

Toppings– avocado, shredded cheese, jalapeños, sour cream, pico de gallo, guacamole. The options are really endless!

What to Serve with Chicken Fajitas

The fajita filling is served in tortillas and topped with allll the toppings. Chicken fajitas are typically served with corn tortillas, but if you prefer flour they are also delicious. Using these taco stands is a fun way to serve them. Cilantro lime rice, or regular white rice is a great side to have with fajitas, as well as black beans. When it comes to topping them nothing is off limits. Add whatever you like! The fajita filling can also be served over rice and made in to a bowl. You could use the filling as part of a salad, use it in quesadillas, or as the topping for nachos. The leftovers can be stored in the fridge for up to five days. This makes it a good option for meal prep as well. So many options!

Ingredients
  

Fajita Filling

  • 1 1/2 lbs boneless skinless chicken breasts sliced into 1/2 inch thick strips
  • 3 sweet bell peppers cut into strips
  • 1/2 medium sweet onion cut into strips
  • 1/2 medium red onion cut into strips
  • 3 cloves garlic minced
  • 3 T olive oil
  • 2 limes, juiced or to taste
  • chopped fresh cilantro for garnish
  • sea salt for garnish
  • corn or flour tortillas

Fajita Seasoning

  • 1 tsp smoked paprika
  • 1 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 2 tsp chili powder
  • salt and pepper to taste

Optional Toppings

  • Sliced Avocado
  • Salsa
  • Shredded Cheese
  • Sour Cream
  • Tomatoes
  • Guacamole

Instructions
 

  • Preheat oven to 400. Line a rimmed baking sheet with parchment paper and spray with cooking spray.
  • In a small bowl whisk the fajita seasonings together. Slice chicken, peppers and onions.
  • Spread the peppers and onions onto the baking sheet. Top with chicken and sprinkle the seasoning blend and minced garlic over everything. Drizzle the olive oil over the chicken and veggies.
  • Mix everything together and spread into an even layer. Be sure the chicken is not overlapping.
  • Bake for 20-25 minutes stirring halfway through. Wrap tortillas in foil and warm in the oven during the last five minutes of cooking.
  • Sprinkle cilantro, sea salt and lime juice over everything. Toss to combine.
  • Serve in tortillas with desired toppings. Enjoy!
