Delicious Steak Pasta Recipe

Pasta night is my absolute favorite, and steak night is my husband’s. With our delicious steak pasta recipe we have can both of our favorites in one meal. Steak is not used in a pasta recipe very often, but it should be! The rich flavor of the steak compliments the tomato sauce so well! The sauce consists of roasted tomatoes and garlic, basil, lemon juice, and diced tomato. It is blended to a smooth consistency. It includes minimal and simple ingredients, but is full of flavor.

How to Make Steak Pasta

Season the steak and put on the grill. Any cut of steak will work for this dish as long as it is tender! We used ribeye for the recipe, but you pick your favorite cut. You can use any seasoning you like for your steak, but we highly recommend trying herbs de Provence! This herb blend compliments the sauce so well! It consists of thyme, rosemary, savory, marjoram and oregano. We also seasoned our steaks with some Worcestershire sauce and salt and pepper. Once your steak is seasoned to your liking you can cook it however you prefer! We grilled our steaks.

Prepare the cherry tomatoes and garlic for roasting. Preheat the oven to 400. Lay parchment paper on a rimmed sheet pan. Pour the cherry tomatoes onto the pan and toss with olive oil and salt and pepper. Pop these in the oven for about 20 minutes.

Cook the pasta. Use any shape pasta for this. We like a long pasta for this dish. We have used fusilli col buco and spaghetti noodles for this dish. Be sure to cook the past to al dente according to the directions on the package. Before draining the noodles reserve about 1 cup of pasta water.

Blend the sauce ingredients. While the tomatoes and garlic are roasting you will prepare the other sauce ingredients. You will blend a 14 oz can of diced tomatoes, fresh basil and the juice of a lemon. Set this aside until the tomatoes are done roasting.

Finish the dish

Chop the almonds. The almonds are an unexpected, but absolutely necessary ingredient. They add texture, saltiness and a little crunch. To chop them we added 6 ounces of whole natural almond and blended them until they were roughly chopped. Set these aside until later.

Finish the sauce. Pour the roasted tomatoes, garlic and all of their juices into the blender with the other sauce ingredients and blend until smooth.

Combine the ingredients: Pour the hot pasta into a large serving bowl. Toss with the sauce, pasta water, almonds, and parmesan. Start with about a 1/2 cup of water and add more as needed. Top the pasta with sliced steak and garish with more parmesan and fresh basil. Enjoy!

Delicious Steak Pasta Recipe Ingredients

Steak- use your favorite cut of steak in this recipe. We used ribeye, but any cut will work as long as it is tender and well seasoned.

Cherry tomatoes- the flavor the roasted tomatoes adds to the sauce is incredible! Fresh cherry tomatoes are a staple in our kitchens!

Garlic- I mean can you even make a pasta dish without it?

Diced tomatoes

Fresh basil- you can always use dried basil instead, but the flavor the fresh basil adds is so much better!

Lemon- the juice of one lemon is added to the sauce

Almonds- 6 ounces of whole natural almonds are finely chopped and added to the sauce. They are a great addition to the recipe!

Pasta- one pound of pasta of your choice cooked to al dente.

Parmesan cheese- freshly shredded is always best

Roasted tomatoes and garlic are blended with lemon and fresh basil, tossed with chopped almonds, pasta and parmesan cheese, and all topped with perfectly seasoned steak. Simple and delicious!

Ingredients
  

  • 24 ounces Ribeye steak or cut of choice
  • Herbs de Provence to taste
  • Worcestershire sauce to taste
  • 10 ounces cherry tomatoes
  • 8 garlic cloves
  • 2 T olive oil
  • 14 ounce can of diced tomatoes
  • 1 lemon juiced
  • 1 ounce fresh basil or to taste
  • salt and pepper to taste
  • 6 ounces whole natural almonds finely chopped
  • 2 cups parmesan cheese freshly shredded

Instructions
 

  • Preheat the oven to 400. Line a sheet pan with parchment paper. Toss cherry tomatoes and peeled garlic cloves with olive oil and salt and pepper. Roast for 18-20 minutes.
  • Season steak with herbs de Provence, Worcestershire sauce, and salt & pepper. Cook steak to your liking. We grill our steak for this recipe.
  • Boil water for pasta. Cook until al dente. Reserve 1 cup pasta water before draining.
  • Blend almonds in a food processor or blender until finely chopped.
  • Blend 14 oz diced tomatoes, fresh basil, and juice of 1 lemon.
  • Add roasted tomatoes and garlic to blended mixture and blend until smooth.
  • Shred 2 cups parmesan cheese.
  • Pour hot pasta into a large bowl. Toss with the sauce, almonds, parmesan cheese, and 1/2 cup pasta water (add more if needed). Top with sliced steak and garnish with more parmesan and fresh basil. Enjoy!
