Add yeast, sugar, and salt to a large bowl. Pour warm water in and stir to dissolve. Slowly stir in the flour. The dough will be sticky and "shaggy."
Stir in the garlic and rosemary just to combine.
Cover the bowl with a towel and let rise for one hour. Turn on your oven and set bowl on top for a warm place to rise.
Lay out a large piece of parchment paper and dust it with flour. Place the dough on the parchment and shape the dough into a bowl. Fold and knead it until a ball forms. You may need to add flour ( a tablespoon at a time) if the dough is too sticky. Once a ball is formed flip the dough over the smooth side is up. It does not need to be perfect.
Once the dough is shaped cover it with the towel again and let it rise another 20 minutes.
Place the empty dutch oven in the oven and preheat your oven to 450. After twenty minutes carefully remove the hot dutch oven from the oven. Lift the bread by the parchment paper and set it in the dutch oven with the parchment paper.
Score the bread on top down the middle with a sharp knife. Place the lid on the dutch oven and bake for 30 minutes. Remove the lid and bake for another 5 to 10 minutes until the bread is golden brown.
Lift the bread out with the parchment paper and let cool for 30 minutes before enjoying!
