Air Fryer Lemon Parmesan Chicken
- In a medium bowl mix together the eggs, garlic, parsley, lemon juice, and salt and pepper. Pour into a large ziploc bag and marinate the chicken for at least one hour.
- When you are ready to cook the chicken combine the breadcrumbs and parmesan in a medium bowl. Dip the chicken in the breadcrumbs to evenly coat both sides. Spray the chicken with cooking spray.
- Air fry for 15-18 minutes at 390 flipping halfway through. Garnish with parmesan and parsley.
- Serve sliced over the pasta.
Lemon Pasta Alla Vodka
- In a large pot of over medium high heat add the olive oil. Sauté the onion for a few minutes until fragrant. Add the garlic and red pepper flakes and sauté 1 minute longer.
- Add chicken stock, lemon zest and juice, cream and vodka to the pot. Bring to a summer and stir in the noodles.
- Cook until the noodles are al dente and stir in the spinach and parmesan cheese. Cook until cheese is melted in and spinach is wilted. Season with salt and pepper to taste. Enjoy!
