Loaded Burger Guacabowle

This burger bowl has a Mexican twist. It is seasoned to perfection and layered with romaine lettuce, tortilla strips, and topped with loaded guacamole.

Ingredients
  

  • 1.5 lb ground beef made into 4 burger patties
  • 8 corn tortillas sliced into strips
  • 4 slices bacon cooked and crumbled
  • 2 heads romaine lettuce chopped
  • 1/2 cup corn
  • 2 T green onion chopped
  • 2 T queso fresco plus more for garnish
  • 1 cup white rice
  • pickled jalapeños for garnish

Guacamole

  • 4 avocados
  • 1 lemon juiced
  • 1 lime juiced
  • 1 red onion separated in half
  • 1 jalapeño seeds removed
  • 2 cloves garlic
  • 1/3 cup fresh cilantro
  • 1 roma tomato chopped
  • sea salt to taste

Seasoning Blend

  • 2 1/2 tsp chili powder
  • 3 tsp smoked paprika
  • 2 tsp cumin
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp kosher salt
  • 1 tsp onion powder
  • 3/4 tsp oregano

Instructions
 

  • Preheat the oven to 375. Slice tortillas into thin strips and place in a bowl. Mix together seasoning blend spices in a small bowl. Pour half of the seasoning blend over the tortillas add 1 T olive oil and toss to combine.
  • Pour the other half of the seasoning over the beef, mix together and patty into 6 burgers. Grill or cook the burgers as desired.
  • Cook rice according to package directions.
  • Lay parchment paper on rimmed sheet pan. Spread tortilla strips on half of the pan. Lay aluminum foil on the other half of the pan and roll the edge along the tortilla strips to create a "divider." Lay bacon on foil. Bake for 8 minutes, stir the tortilla strips and return to the oven for 5-10 more minutes.
  • Crumble the bacon when it is cooled.
  • To assemble the bowl: scoop rice into the bottom, and top with lettuce, tortilla strips, the burger, guacamole, pickled jalapeños and queso fresco. Enjoy!

Guacamole

  • To a blender add: cilantro, garlic, lemon and lime juice, jalapeño, 1/2 of the red onion and salt. Blend until smooth.
  • Mash avocado. Add chopped onion and tomato. Gently stir in the blended mixture.
  • To "load" the guacamole add the corn, green onion, and bacon and queso fresco. Stir gently until just combined.
