Sheet Pan Feta & Gnocchi

Gnocchi is roasted on a sheet pan with veggies, tomatoes, and feta to create a creamy, saucy, one pan meal.

Ingredients
  

  • 2 lbs gnocchi
  • 2 lbs cherry tomatoes
  • 1 ring smoked beef sausage
  • 2-4 chicken sausage links
  • 8 oz block of feta cheese, cubed
  • 1/4 cup olive oil
  • 2 tbsp white wine
  • 2 tbsp honey
  • 2 tsp dried oregano
  • 1/4 tsp crushed red pepper
  • 4 cloves garlic, minced
  • 1/2 yellow onion, chopped
  • salt & fresh ground pepper to taste

Instructions
 

  • Preheat oven to 425. Prepare baking sheet by covering with foil.
  • Slice sausage, chop onion, cube feta, and mince garlic.
  • Pour all ingredients on to prepared sheet pan. Toss to combine and cover everything.
  • Place sheet pan in oven and bake for 30 minutes until sausage is crisp, tomatoes are blistered. and the feta is golden.
  • Remove from oven and stir to combine ad make feta and tomatoes into a sauce. Continue to stir until everything is well coated. Enjoy!
