Sheet Pan Feta & Gnocchi
Gnocchi is roasted on a sheet pan with veggies, tomatoes, and feta to create a creamy, saucy, one pan meal.

- 2 lbs gnocchi
- 2 lbs cherry tomatoes
- 1 ring smoked beef sausage
- 2-4 chicken sausage links
- 8 oz block of feta cheese, cubed
- 1/4 cup olive oil
- 2 tbsp white wine
- 2 tbsp honey
- 2 tsp dried oregano
- 1/4 tsp crushed red pepper
- 4 cloves garlic, minced
- 1/2 yellow onion, chopped
- salt & fresh ground pepper to taste
Preheat oven to 425. Prepare baking sheet by covering with foil.
Slice sausage, chop onion, cube feta, and mince garlic.
Pour all ingredients on to prepared sheet pan. Toss to combine and cover everything.
Place sheet pan in oven and bake for 30 minutes until sausage is crisp, tomatoes are blistered. and the feta is golden.
Remove from oven and stir to combine ad make feta and tomatoes into a sauce. Continue to stir until everything is well coated. Enjoy!
